After last week's fiasco with chicken thighs (mental note: never put rice in
a slowcooker) I did a very nice piece of Aldi corned beef for tonight's
dinner. Very easy. Silverside in cooker. Barely cover with water. About a
cup of white vinegar. Chopped onion, chopped celery stick, 15 black
peppercorns, 2 fresh bayleaves, 2 tablespoons brown sugar. Could have added
a sliced carrot but didn't. Sat and cooked on low between 10am and 6pm.
Seved with mashed potato and cabbage. 5yo ate two serves quicker that we
could eat ours - very unprecedented (although she did smother the mash with
tomato sauce). Very yum and heaps of leftovers. I must make a corned beef
and kosher pickle sandwich tomorrow for lunch. Double yum!!!

What will next week bring I wonder?

Where did you get the fresh bay leaves from?
I don't believe I've ever seen some, but then I've never been
specifically looking for them in the past...

I grow my own. I've had a bay tree in a pot for years and only put it in the
ground last year. It is thriving. Nothing beats fresh bay leaves....except
maybe my rosemary :-)

Just on Low? Not High first then turned down? Or Auto?
Sounds too good to be true. I'm definitely interested.

This could be next Saturday Night's treat for me. (childhood memories etc
etc)

thanks

While on that topic - Is it just me or are slow cookers a lot hotter now
that the old original Monier Crock Pot back in the 70's?
I was only a kid back then, but I don't remember stuff bubbling away madly
like it does in the newer ones.

I had a sunbeam slow cooker for abt 17 years, 'till I broke the crock.
It never bubbled even on high. Replaced it with a 6 litre breville meal
maker and it bubbles even on low !! Contacted breville and they say
there's nothing wrong with it, but there is no way anything could be
left on for 8 hours,- even on low !! Give me a sunbeam crock pot any day.

That's interesting to note (if mine breaks, I won't get a Breville!!!).
I've got a Ronson. On high it will bubble (sort of like a simmer on the
stove), and on low it will only bubble every now and again. I can thus
leave it on low all day.

I cooked a small piece of roast pork in it once with potatoes and carrots
(it was really good too). I browned the pork first. I thought it would
take all day, but was surprised to find that everything was ready by 2.00pm
(had to re-heat for tea!!!)

My mum had one of those 1970s models. And it was the worst meal she ever
made (she only used it once or twice). Absolutely awful. I wasn't that
old, but I remember this revolting casserole thing. Mum also said that it
was awful.

Mum was a good cook, so it wasn't due to being a bad cook, and I've never
really had a failure (except for salty silverside). When I tell mum that
"I'm cooking in the crock-pot now, she turns up her nose!!!".

Do you think those original crock pots were made differently to todays? Can
you remember what your Monier Crock Pot looked like (ours was this mustardy
colour).

Maybe if you don't remember stuff bubbling away in them, perhaps it is like
you said and they don't get as hot as today's cookers?

Was your mum's recipes successful? Did you like it?

Did you find the silverside salty? Is it more salty than cooking it
normally, or do you think it is the same?

I cooked it in my slow cooker once, and found it really really salty. I
added much more water than you (covered the meat), but still it was salty.

I thus have reverted back to cooking silverside in the soup pot (I don't
have a pressure cooker).

[Tomorrow I'm cooking rabbit in the slow cooker for the first time. Have
soaked it in salt water (to remove "wildness"), then will leave overnight in
plain water. In morning will put rabbit in pot, together with lots of bacon
pieces and a large onion. (that's the recipe I use when I cook "normally".]

I did find it quite salty but read online (when I went to check different
recipes) that if you turn off the cooker at thew end and leave the meat for
half an hour to an hour just sitting in the water, the water draws the salt
out. Don't know if that's true but it's worth trying next time.

I reckon you should always leave it in until cool, unless of course it is
part of a hot meal (silverside with creamy potatoe mash, sprouts, cauliflower
with mustard sauce on the side). I have always done that, so that it stays
moist, my wife doesnt use much salt on her food and I have had no complaints
about it being salty.
