Some friends roasted a pig on a spit last night and gave us some of the
leftovers. It's in chunks and large shreds, not a big piece. DH stir-fried
some with veggies tonight but I didn't really like it that way. The pork was
very tender already and had an almost soggy texture when re-cooked. Any
suggestions what I can do with the rest?

I agree. Great on a sandwich or roll with apple sauce.

Thanks for the suggestions. I ended up making a kind of toad-in-the-hole,
and it turned out really nice. I only had two eggs, so not much batter. I
cut the pork into even-sized strips, pressed it down into an oven-proof dish
to leave as little as possible space between the strips, spread on a little
mustard and got it nice and hot. Then poured the batter over and back into
the oven to rise and brown.

Interesting! The pressing-down thing is very valid, with already-cooked,
rich meat. Quite clever!

Either re-heat in Microwave and cut into slices and put in fresh Bread Rolls
or on bread (or Hot Toast) ... Or even cook an excess of baked veggies, like
Potato, Pumpkin, Onion, Kumara and cut up the left over's and make some
'Bubble and Squeak' by frying, in some melted Butter and adding Pork that
has been cut up with it and serve as a light meal with hot toast.....
Yummy.... I often do this with any left over roasts, be it Chicken or any of
the Red Meats...Lamb is particularly delicious..
