I like Pizzas and I like Vegies, sO I need some help in Makeing a
Vegeterian Pizza. I have made some over the years and never followed
any intructions realy, I just put all the stuff I like on it and cook
and eat, nothing I would give to anyone else though :)


I most would like to know what herbs and spices to use on my Pizza to
make it taste like a REAL pizza, not a Pizza hutt, Dommino's Pizza, A
real Itallian Pizza, or is there such a thing still ?


One thing I like is add some sweet chilli sause to my pizza and that
make sit yummy.

Oregano(dried and fresh) and basil would be the two most authentic herbs.
Put them in the sauce, or sprinkle them on top, or both. Garlic is the
obvious spice to use and dried chilli would be nicer to my taste than the
gloopy vegetable gum mess that most sweet chilli is; or char grilled fresh
ones. Fennel seed is a common Italian spice too.

Char grilling your veges is probably the best thing you can do to make a
nice vege pizza. Capsicum, squash, fennel, red onion, zucchini, eggplant,
asparagus, etc., but don't put them all on at once. Remember the cardinal
rule of pizza toppings: less is more. Use quality though.

If you're not vegan, good quality mozzarella/bocconcini and to a lesser
extent feta make a big difference.

Some recommend not to cook your tomato base, but whatever you choose for the
love of god, don't use tomato paste.

Of course being a vego, you miss out on the best bit of a pizza: anchovies!
You could approximate their salty goodness with olives, capers, feta or
marinated artichokes.

Use very thin bases cooked at high heat and drizzle with good quality EVOO.

Only been a Vegie Mucher for aboutr six months, My best was 2 years,
but IU moved to day shift where I worked and I needed my meat then :(

Will give it a go on the weekend or sooner when I can get all the
stuff together.

I use tomarto paste ona pizza, just said I did not mix the herbs and
spiices in the paste for some stupid reason, allways put them on top,
which is not right :(

For some stupid reasoN i did mix the sweet chilly suase into the
tomarto paste, Go figure :)
