I've seen an American recipe that looks interesting:

but there are two things I need help with... how much is a stick of
butter, and what is orange zest?

I *think* the zest is the white stuff from the inside of an orange
peel? Can it be bought or do you have to get aggro with an orange?

I think it's shredded orange peel (not just the white stuff).

A stick of butter is 125 grams (4 oz ). My ex missus is a yank and she
told me that!

The zest is the peel or should I say the orange part of the peel. You
can get a tool called a zester

it basically takes the top layer of the peel (This is where most of
the essential oils / strongest flavours are ) and makes it into little
strands. There are many and varied varities but they all the same
thing (sort of).

Want to see something ... take a piece of lemon or orange peel and
fold it in half gently. Now light a candle (or use a lighter) . Hold
the peel close to the candle at the bend of the peel and squeeze. You
will the oils shooting through the flame and catching alight. Looks
awseome with the lights out .

haven't come across it but since I do use mixed fruit a LOT such a product
would suit me.

No. All sorts of recipes use zest in them - either orange or lemon. I'd
probably use zest once every few days.

The Microplane brand of graters/zesters are also very popular for getting
the zest off citrus too:

The zesters like the one in your photo are great for marinades and the like,
where long ribbons of peel don't matter, otherwise you have to chop the zest
up afterwards.
Oh, and another reason you just want the top layer, is that the white pith
underneath the zest is bitter.

May I just add (to this awesome answer) that before you zest your
orange (or lemon or lime), scrub it thoroughly to remove any wax
and/or pesticides from the surface.

stick is about 4 oz I think which is a solid slice from a 1lb slab ,
that's about 120 gms , zest is grated rhind , just run the grater over
the surface leaving the white behind .
Rather than rum I prefer a good dollop of drinkable whisky but each to
their own (and a little for the cook)

much butter make it too rich?

I tend to use whatever yellow grease is in the fridge for baking, the
result tends to work OK, but if that yellow grease happens to be
actual butter how much of a difference does it make?
