Here's a couple of recipes from a Maggie Beer cookbook I came across.
Neither have mayonnaise, not that there's anything wrong with that. :)

Roasted Waxy Potatoes with Pancetta, Capers and Preserved Lemon
&
Warm Barossa Potato Salad

Looks very nice. Very different from the chicken shop's salad.
