This seems to be the closest rel event .aus group, so...

Been doing a bit of searching but not finding much concise info, so I
thought why not ask here:

I'd like to have a go at home brewing some sarsaparilla.

Does anyone know where in Australia one can procure the proper
ingredients? I have no interest in using any artificial flavours, etc.

Failing the above, any instructions/recipes would be of interest to look
at as well.

Thanks

Nothing in Australia that I'm aware of.
Here is an article that might help.

I'd contact diggers and see what natural ingreedients you could grow
yourself.
www.diggers.com.au
They're a mailorder nursery specialising in vintage/non-commercial plants
that have disappeared from nurseries and supermarkets around Australia.
Good luck, I'd love to hear what eventuates.
