Found elsewhere (I saw it in sci.agriculture) and I thought it may be
of some interest to the more feral denizens of RFC and aus.food. ;-)

I have butchered lots of meat rabbits. And I have made alot of
sausage. Usually around 166 pounds at a time. personally I would not
use rabbit intestine as if you were making sausage that small, you may
as well make skinless sausages. "Down to the Roots" magazine
http://www.downtotherootsmagazine.com has a good article in its Fall
2006 issue on sausage.
Honestly unless you are a hardcore purist, I would buy my sausage
casings from the meat counter. The last time I bought them, it cost me
less than $5CA to get more cleaned and salted casings than I could use
in a year and they keep for a very long time in your refrigerator.
(probably a year or more). I have better things to do with my time on
the farm than to strip intestines and turn them inside out to wash and
then salt them. It is usually me who ends up with the brunt of the
butchering and cutting & wrapping, so $5 is cheap for me.
Have you seen a rabbit bladder? They hold about 3 tablespoons of urine
or less. But to answer your question, yes you can utilize the stomach
and bladder if you wanted to, but it would behoove you to use a sheep,
goat or hog bladder/stomach instead. You could stuff a rabbit stomach
if you wanted to use it that way, much like haggis with sheeps
stomachs.

Upon slaughter of a meat rabbit, it is desired to process the
intestines for later use as sausage casing. How to do the prep ?
