Post by FarmIDoes anyone have the recipe for Date and Walnut loaf that is made int eh
cylindrical tin with the two caps in the end please?
And speaking of those tins, has anyone seen them for sale anywhere int he
last few years please?
Date Loaf
1 tablespoon butter
1 cup boiling water
1 cup dates (very roughly chopped)
3/4 cup sugar
1 teaspoon bicarb of soda
2 cups plain flour
Method
Place dates, butter and sugar in bowl and pour the cup of boiling water over
the mixture. Allow to stand for a few minutes. Then add flour and bicarb and
mix thoroughly (but don't overmix or it turns to rubber)
*** I'd normally mix in a handful of roughly chopped walnuts at this
point***
Put into greased tins and cook for 3/4 hour in a moderate oven. When cool
slice and spread with butter.
The tins that I have are made by Willow. I saw them (or ones that were
similar, I didn't look that closely!) for sale yesterday in The General
Trader - http://www.thegeneraltrader.com.au/ However that's not much use if
you're not in Vic or SA. You might also try somewhere like KMart.
