Hi

Many thanks for the answers to my question. This is what happened.



Scored skin then rubbed it with salt and oil.



Tried to find the metal skewers to use as advised. Someone had pinched them.

(Question: How could this happen, there was no sign of forced entry and no
other items were stolen.)



Put in preheated oven (220) for 20 mins. Added water as advised.

Set temperature to 180 and waited.



My calculations suggested 7+ hours, lass behind counter said 5 hours.

After 5 hours checked with fork - juice was clear.



Cracking was superb, meat was also. Some slight redness around part of the
bone (no problems, microwave reheating will solve this)



So the lass was right - 5 hours for 8.7 kg.



Great butcher, good advice and pork leg at $5 per kg.

The Borrowers take them, along with rubber bands, cotton reels, large safety
pins, one's favourite manicure scissors and various other bits of domestic
essentials. Worse than rats in the roof are those Borrowers.

Have you ever heard of ' Underpants gnomes' ? (South park fans would
know of them)

These are a distant cousin - the skewer gnomes who are closely related
to the sock gnomes who inhabit the washing machine world.....
