What is the best rice to use in Paella?
As Michael has said "calasparra", which is apparently a Spanish SHORT
grain rice. Go figure!
I love Antony Worrall Thompson's recipes, because they're generally
idiot-proof and tasty, and I never trust a skinny cook. :)

I also saw this program - I think on lifestyle food - about the
science of food and cooking. This particular episode was about rice,
and it had a demo of how to cook a paella (don't stir the rice!).
If you're in Sydney, you could probably get calasparra rice at one of
the Spanish delis in Liverpool St in the city, or one of the
Portuguese shops in Petersham.
(You wouldn't get THIS information on Google, would ya????)
