What should I use when cooking jacket potatoes (usually one at once) in the
microwave? I have seen specific "potato microwaver" products, are they any
good? Will using a larger microwave dish produce better results? A smaller one?
I am trying to find a way to get better results so my potatoes dont come
out with some parts being all slimy.

I don't use a particular dish I just grab any dish, saucer or bowl and I
don't have any problems. My microwave has a specific setting for sensor
cooking jacket potatoes though. One instruction that came with my
microwave was to pierce both sides of the potatoe with a fork, so I
usually pierce both sides of the potatoes twice with the fork.

After a couple of minutes sensor cooking I am told to turn the potatoe
over and it cooks for another 1 to 2 minutes (depending on the size of
the potatoe) when it finishes it tells me to cover with foil for 3 - 10
minutes, but I just leave it in the microwave covered with a heavy
enamel bowl for about 5 minutes.

Any dish that will fit in a convection oven; the poor old microwave can't
compete.
