Our nearest town has a fairly large number of Korean exchange
students.

To meet their demand, the fruit and vegetable store now sells fresh
kimchi.

I bought a 1kg tub last week, and had a decent serve of it today for
lunch, with some fried orange roughie.

Excellent stuff! I don't know who makes it, but it's possibly the
best I've had outside Korea.

It seems to be quite common in the numerous Asian grocery stores in
and around Chinatown in Sydney, and I'll try [just about] anything.

I was in the Thai grocery store near work yesterday and overheard an
argument between one of their employees and a supplier/deliverer of
kimchi. The delivery guy was telling the employee off for not having
it refrigerated, when it is a fresh product.

This was on a dry, windy 33C day.

Needless to say I didn't buy any. :P

Needless to say I didn't buy any. :P
They just pickle/ferment quicker if not refrigerated and are quite edible
even after a week after exposure. The texture does chg somewhat and the
vegetable tissue does soften, but it tastes great with good soya sauce :)

Not too sure about the mouldy bits yet :) I'll letcha know when I am game
enuff :)

Hm, probably "ferment" is a better word than "pickle" but who cares :) I am
digressing.

Which town is that, Craig?

I don't recall seeing many Koreans back when I was living in your area
(admittedly last millenium). Are they typicallly students at that new
Southern Cross Uni?
