Did anyone watch this?

I turned on half way through and he was making a stuffed cannelloni dish. I
wrote down the method for the dish assembly but missed how he put together
the cauliflower and broccoli filling.

It looked easy and yummy - so would really appreciate it if anyone took
notes.

Thanks!

I saw this episode, and from memory, he parboiled the cauliflower &
broccoli, and while this was happening, he fried some garlic and about 4
dried chillies in olive oil. He then added the veg and continued to cook it
till soft. Probably added some salt & pepper also. He didn't seem to mash
it, just let it cook down to a mush which he then piped into cannelloni.
Was very simple, not much else added.

Hope that helps!

Thank you!!!

You don't remember how much cauliflower and broccoli by any chance?

That's where I started watching. If anyone is interested, the next steps
were:

Take a bottle of pasatta (one of those standard Italian ones -not sure how
many mls) - add a splodge of red wine vinegar and some salt - shake it in to
mix. Then put a 1/2 cm layer of this in the bottom of a baking pan (the pan
should be big enough to hold 12 - 14 cannelloni shells) - this took around
3/4 of the bottle.

Stuff the cannelloni shells with the cauli and broc mix described by Alex
above - JO used a plastic bag with the end cut off for this, much easier
than using a teaspoon.

Put the stuffed shells on the pasatta layer. Top this with a thin layer of
crème fraiche with a lot of parmesan mixed in - it should be very cheesy.
(You can use béchamel sauce but, as he said on the show, this is much
easier). You can also put some lumps of buffalo mozzarella on the top for
even more chewy cheesiness.

It goes (uncovered) into a 190 degree oven for 30 minutes or until golden
and bubbling.
