G'day mates,

FWIW the weekly foodie insert in the Brisbane _Courier-Mail_ today
(Wednesday 3 Sep 2008) had a spread on various lamb recipes.

Haven't had time to look closely yet; just thought I'd mention it in
case you missed it but your local newsagent hasn't thrown it out yet.

Cheers, Phred.

Have you seen the price of dead sheep lately?? Lamb cutlets were
$34.00 a kilo in Coles here in Perth the other day.

Cant beat dead pig or chook as far as I am concerned but much prefer
dead fish over all other meats.

Mmmm a nice bit of crumbed Snapper with a white sauce and seeded
chilli mustard. MMMmmmm

my brother sent me a photo a couple of weeks ago, of lamb loin chops at the
Melbourne markets, at $7.99 kg! and they looked great!

they're currently at least $19.99 kg in Adel :-( so I told him next time he
flies home, to pack a cooler bag with several kgs for his poor family back
home :-)

I've seen that sort of price quoted in the papers too, but here in the
deep north I haven't noticed them at that level in our local Coles.

But even at $19 or $20/kg I consider them too dear. Mind you, I
suspect our "two-tooth lamb" is only that because the rest of them
have fallen out; which may explain the discount!

Dead fish is good, but you have to catch it yourself and eat it
promptly. The stuff one buys from fish shops always tastes foul to me
(and that's not to suggest it tastes like chicken :). The only way I
like retail fish is as fish'n'chips -- and even then it's only there
to support the batter. :-)

Cheers, Phred.

Yup ...fresh is best. I love Herring (Tommy ruff to you'se easterners)
and I have to say its a very underestimated fish when it comes to
smoking it ! Fantastic flavour.

I love whiting, herring (as above) silvertail cobbler, Tailor, and
shark.

When I was up North (Carnarvon) I used to go down to the beach
...light a fire...catch fish ...cook on open fire with several beers
to wash down ...whilst damper cooked in coals and just sit back and
listen to waves ...dam that was hard to take !!!! NOT !!!

I prefer fish to flake, and I've never met a fish I didn't like (apart from
muddy-tasting ones, but that's bad luck, not the fish's fault).

I grew up on Herring - father had a Quinny & fished out of Marmion Angling
(was pres. for a while, too)
I'm with you on liking them, though not too often.

Coming through Carnarvon in a couple of weeks - delivery from Exmouth back
to Perth (Beneteau 43).

Got a good fishing spot close to town? I've only been down to around the
courthouse parking area while passing on up to Gnaraloo. I've heard that
the jetty's good. I have done the open fire and beers on the beach deal at
False Entrance many times long ago.

Define 'close' to town ;-)

If your after good size fish then the blowholes is usually good. Get
some good sweetlip etc off the beach south of the blows (Get past the
camping / shack area - I think its a fish reserve there) or off the
rocks ballooning to the north. Not exactly truck friendly tracks tho !

If your into fresh oysters off the rocks then check the rocks up north
from the shacks Take a screwdriver and enjoy. Dont get any fresher
than that !

The jetty is good for Mullaway and good tailor.Crabs (Blue manna) are
around in good numbers at the moment too(im told) . Be warned about a
fish called a Happy Moment. Can cause a LOT of pain as a mate of mine
found the hard way. Try the little jetty half way out for Dart. Dont
worry - you will know when you get one - ZOOOOM !!

Just North of town is Miaboolya Beach. We had some great nights there
catching 15+ kilo Mulloway like herring when they are on the bite. You
will know if they are there by the smell. Mully's swim along the
shallows emitting a scent that attracts the beach worms up then they
turn around and chomp chomp chomp ...no more beach worms hehehe

Also some good whitting from there.

South of Carnarvon - there is Bush Bay. Great camping spot (Watch out
for the mossies cleverly discised as B52 bombers) . Gravel road in
that was in good condtion last time I was there. Great Whiting spot
If you have a boat then ...hey anywhere there is water hehehe !

Close to town means within Zodiac range of the anchorage - no vehicle access
so blowholes out of the question etc. Probably drop it in and just nip
around where we tie up. Some tailer slabs on a barbie would be schmicko -
we've got a rail BBQ on the boat.

I've never heard of "Happy Moment" - some sort of Catfish? Electric Eel?

Link worked fine. Never seen these things - maybe because you don't tend to
dive in estuaries. Thanks for the heads-up. Because they don't look like
any Scorpion fish, I guess you could be a little complacent in handling
them.

Mangrove Jack sounds good from the dinghy. Will let you know how I go.

I love them all.

Hmm -- as part of the last side of lamb, I got a slab of ribs (of course).
I'd like to marinate and grill them. I've seen packets of American Ribs in
the shops, but the recipes I've read seem to involve hours of cooking even
though there's hardly any meat. What's the go with this? And how do you eat
them? More to the point, how does a 3yo eat them?

Horrific Yank recipe of the week:

y-Childhood-Creamy-Cucumber-Salad.html

Bastard son of tzatziki, I think. All those nice cucumbers ruined with sugar
and low-fat miracle whip... :-(

I love the flaps (ribs) . They are dirt cheap and full of flavor.
Normally I just cook 'em up in a fry pan with a little oil. Takes
about 10 mins. Make sure to turn them. Or do them on the BBQ. As you
say there is not a lot of meat on them but they are fun to eat.

You can do so many things with them. I like to cook them in rosemary
oil (Bung some sprigs of rosemary into some good canola or your
favorite oil - I give the sprigs and leaves a bit of a bash around
with a meat tenderiser to bruise them before adding to the oil.) The
longer you leave it the better / stronger the flavor.

To serve them up to 3 year old ...cook'em then run a knife down
between the bones. I always cut to one side of the bone that way you
get all the meat on one side of each bone.

As for adults - serve with mustard or a chili dipping sauce or
whatever your favorite is. I make a BQQ sauce with 2 tablespoons of
tomato and 1 TEAspoon of Worsteshire sauce mixed.

You could always use some of my Cajun spice on them. 1 thing I want to
try is making a curry with them.

Man I have made myself hungry now hehehe !

Well most rib cooking involves "slow", for a 3year old cut them into
small hand sized portions :-)
Allow 2hrs pre cook and half an hour to finish off.
