The perennial problem... what do you do when the recipe has things you
don't normally see?

For example I have one that wants molasses. OK, the last time I saw
molasses it was in the feed store when I was picking up horse feed.
It came in 4 litre drums.

This one wants 2 tablespoons for a barley pudding, seems to be a
thickener as well as a sweetener.

So what would be a good substitute? Golden Syrup?

Also, what about buttermilk? What's the Aussie equivalent of that?

Buttermilk can be replicated with normal milk and lemon juice or tarter
at two table spoons per cup
Molasses is effectively raw liquid sugar being the by product of
making white refined sugar so syrup tastes different but complies with
the sugar levels
Most any feed store will have molassis in two litre containers but
without some cattle ... it is good for mixing with anti freeze if cats
are a problem ( very cruel though)

Just go to the supermarket - my local Woolworths and Coles *both* stock
Molasses (just next to the Golden Syrup) and Buttermilk (dairy section,
over --> there) - and I've not noticed a massive influx of septic
accents in Parkdale or Mentone!

You're in Australia, I gather. As someone posted below, molasses is
available in the sugar section of the supermarket, near the golden
syrup. (I think golden syrup might be a bit lighter in flavour, so
wouldn't neccessarily be an ideal substitute...)

If molasses isn't in the sugar section, try the "baking" section
(where they have cooking chocolate & cupcake/muffin papers etc) or
look around the maple syrup. Depends on the store [manager], but I
wouldn't think that molasses would have been *that* rare here!

Buttermilk is everywhere! Look near the milk, the cream, or the
yoghurt section!

Or make your own.

I did the other day for a banana cake.

4 bananas left over from a hand, went a bit black, so made a cake.


I'll look for the recipe and post it.
